Have you been looking for an alternative to the same old hummus you’ve been making on repeat? Look no more! This red beet hummus made with white beans is creamy and so nourishing. Eat it with crudités, on toasts or by the spoonful (no kidding, it’s THAT good!).
It’s full of healthy proteins and fats from the white beans and tahini. Adding red beets makes it a little lighter, so you won’t feel like you have a heavy stomach afterwards. Snack Platter Inspiration
In the snack platter pictured below, we paired it with raw veggies avocado, olives, sun-dried tomatoes, Medjool dates and homemade crackers. Some veggies you can use include celery stalks, carrots, red bell pepper and cucumber. We also added some sprouts and and flowers (thyme and orange blossom). This elevates it to a whole new level! You can also pair it with other dips, such as this red lentil and garam masala dip (upcoming)! Serve it on a pretty surface, such as the olive wood board we used, and your guests will be absolutely wowed!
Variations of the recipe
If you do not have white beans at home, you can of course use chickpeas instead. Just be warned that the hummus won’t be quite as creamy and smooth as it is when you use white beans!
You can also play around with using different veggies. You could for example substitute the red beets with roasted red bell pepper, roasted carrots, or add some roasted sweet potatoes. As you change the veggies, you can also experiment with spices. Why not add some Italian herbs to your roasted bell pepper hummus, for example? These options all taste amazing and ensure you never get tired of eating hummus (which no one ever does anyway – am I right? 😉 ).
