Avo Green Pea Smash on Baked Sweet Potato

This avo green pea smash is super quick to make (if you’ve meal prepped the sweet potatoes, which I totally recommend you do! ) and so darn yummy! The creamy avocado and sweet potato go so perfectly with the crunchy green peas, tanginess of the limes and the slight bite from the chili flakes and cracked black pepper.

Adding green peas to this avocado smash is such a great and sneaky way to add protein to your meal!

I started making this when I was looking for a gluten-free, whole-foods alternative to bread. I was so sick of eating bread every day, and at the time, ‘sweet potato toasts’ were all the rage. This avo green pea smash recipe is my take on those ‘sweet potato toasts’ – though I admit that they look more like ‘stuffed sweet potatoes’ than sweet potato toasts, hahah. You can never have enough avo smash though, right? 😉

Avo Green Pea Smash on Baked Sweet Potato

For the baked sweet potatoes:

  1. Preheat the oven at 200ºC (top and bottom heat).

  2. Wash the sweet potatoes. Use a fork to 'stab' the sweet potatoes and make little holes throughout them -  this helps them bake through evenly.

  3. Place the sweet potatoes on a parchment lined baking pan and bake for 30-50 minutes. They're ready when they are very soft and you can see caramel forming!

For the avo-green pea smash:

  1. Cut the avocado in half and scoop out the avocado flesh with a spoon. Add the green peas and the avocado to a medium bowland use a fork to mash & combine the two.

  2. Roll out the lime on a hard surface with the palm of your hand (this makes juicing them easier), and then add the juice to the avocado and green pea mix.

  3. Add the crushed garlic, chopped cilantro, salt and pepper and combine well.

To plate:

  1. Cut the sweet potatoes in half. You can mash the flesh a bit with a fork, if you like.

  2. Scoop the avocado- green pea mix into the sweet potatoes, sprinkle with hemp seeds and chili flakes and dig in!

Note

You can bake the sweet potatoes in advance for meal prepping! With the sweet potatoes ready, this meal takes just minutes to make and is super filling, yummy and healthy!

Tastes amazing on its own or as a side, with a salad for example :)
